Extended Care: COVID-19 Literature Review

Since the COVID-19 pandemic was a prominent issue throughout my internship experience, I focused my extended care rotation literature review on nutritional considerations for the COVID-19 patient. At this point in time, it is still difficult to assess nutrition implications of the virus; however, it is important to highlight the role of nutrient depletion, prior illnesses, and feeding positioning in the long-term care COVID patient. While more research is warranted, I found this literature review to be a valuable step in understanding nutrition care in the midst of a global pandemic.
